Highfield Award in Food Safety for Catering (RQF) Level 1
1. Target Group
The personnel who is working or aiming to work in the food handling role.
2. Delegate Pre-requisites
There are no prerequisites required for this course.
3. Physical and Stressful Demands
There are no physical and stressful demands in this course, however the delegates will be required to undergo medical screening by completing appropriate
medical screening form provided by QISC in order to ensure that the delegates are fit and well to participate fully.
4. Aims and Objectives
The objective of this qualification is to prepare learners for employment, orsupport a current position within a low-risk role, where there is an element of food
handling. This could include bar workers, waiting staff, health care workers, kitchen porters and stock/store room staff.
5. Learning Outcomes / Assessment Criteria
After successful completion of this training, the learners will:
(1) Understand personal responsibilities for food safety in catering environment
– State the importance of food safety in a catering environment
– Recognize that food handlers have legal responsibilities for food safety
– State how to report food safety hazards to supervisors
(2) Understand the importance of personal hygiene in a catering environment
– State the importance of personal hygiene when in contact with food
– Identify good personal hygiene practices
(3) Understand the importance of keeping work areas clean and hygienic in a catering environment
– State the importance of keeping work areas clean and pest free in a catering environment
– State how to keep the work area and equipment clean in a catering environment
– State the importance of safe waste disposal
(4) Understand how to keep food safe in a catering environment
– Identify how food can become contaminated by physical, chemical, allergenic and microbiological containments
– Identify safe food handling practices and procedures for controlling contamination hazards from purchase to service of food
– State ways to prevent bacteria multiplying and surviving
6. Delegate Performance Assessment / Certification / Validity
Delegate Performance Assessment: This qualification is assessed by multiplechoice examination, extremely set and marked by Highfield Qualifications.
Learners must complete 15 questions within 30 minutes. Successful learners will have to achieve a pass mark of 60% (9/15).
Certification: Highfield issued certification with no specific validity.
(Certification Issuance will take minimum of 30 working days after the successful completion of course.)
7. Instructor & Delegate Ratio
Maximum of 20 delegates can be supervised by one Instructor.
8. Duration and Timing
The recommended duration for this training is seen as 4 hours.
